How does Chenin Blanc age in a cool-coastal climate?

Three vintages opened side-by-side last week — what we learned.

By Nick · · Updated

We pulled three vintages of Chenin Blanc from the cellar last week — 2019, 2021, and 2023 — and opened them in one sitting. The question wasn't which was best. It was which had changed the most.

Side-by-side notes — 2019 vs. 2021 vs. 2023
VintageColorAromatics
2019Deep goldHoney, dried apricot
2021Pale goldPear, beeswax
2023StrawLime zest, white flower

The 2019 had moved the farthest. It still had acid — but the fruit had given way to something more savory. The 2021 was right in the middle. The 2023 felt like a different wine entirely.

The name Cessy traces back to the Latin caelestis — heavenly, celestial. The stars on every label carry that meaning forward. The rabbit represents agility, balance, and good fortune, drawn from tradition and heritage. Together they are a quiet reminder that the best things are made with intention, and meant to be shared.
